Virginia MacCarthy has taught in the Faculty of Education at Vancouver Island Univesity since 1990 when the institution was called Malsapina University. Her specialty areas have been in teaching Language Arts methodology and supervising student teachers in their field experience. She has also taught courses in Early Childhood Education (University of Victoria) and Curriculum Studies (University of Victoria and Vancouver Island University). She has presented workshops on literacy at many conferences, including the International Reading Association World Congress in Edinburgh, Scotland.

Prior to joining Vancouver Island University, Virginia taught in the public school system in British Columbia in kindergarten and grades 1 through 3. She obtained her Bachelor of Education in Early Childhood Education from the University of British Columbia and her Master of Arts degree in Language Arts from the University of Victoria. Virginia was the Primary Consultant for the Cowichan School District as well as Head Teacher at the elementary school level. She has also taught as a Sessional Instructor at the University of Victoria.

Virginia has worked on the Rural Teachers Training Enhancement project, which is helping train teachers in rural parts of China, for the past five years. Virginia was the Chair of the Education Faculty for three years and the Chair of the Vancouver Island University (then Vancouver Island University) Education Council for four years.
